Rebalanced Piglin Bartering [PurpurPack]

Update to 1.21.2

Fixes an issue where books and boots were just enchanted randomly, rather than enchanted just with soul speed

Starts preparing support easier updating. Adds a 'version_info.txt' file. Also adds 'support' for 1.21.1, though not particularly necessary

Update to 1.21 to use the new tag folder names

Update to 1.20.5 to use the new loot table setup
